Decadent Dark Chocolate Vegan Muffins

Moist… rich… fluffy, decadent dark chocolate. A delicious bite of divine flavour. The sweet scent of cocoa wafting through the air. Succulent… soft… positively mouthwatering. Have one, then take another. Indulge in this healthy vegan recipe.

Ingredients

2 cups gluten-free flour
1 ½ cup water
¾ cup cocoa powder
½ cup sugar
½ brown sugar
½ cup melted coconut oil
½ cup organic unsweetened applesauce
¼ cup chopped dark chocolate
2 tbsp pure vanilla extract
1 tbsp chia seeds
2 tsp pure maple syrup
1 tsp sea salt
1 tsp baking soda

Instructions

Preheat your oven to 350˚F and grab a muffin tray. Fill the muffin tins with paper cups and set aside.

In a large bowl, mix in the flour, cocoa powder, salt, baking soda, sugar and dark chocolate pieces. Stir well.

In a smaller bowl, add the water, melted coconut oil, chia seeds, applesauce, vanilla extract, and maple syrup. Mix the ingredients well, then pour them into the large bowl of dry ingredients. Stir the contents until the bowl is filled with a beautiful smooth cocoa coloured batter.

Take a tablespoon and carefully fill each paper cup. Place the muffin tin in the oven for 25 to 30 minutes, and keep an eye on the muffins as they bake.

Once they are finished, let them rest in the tins and cool before placing them on cooling racks. You can enjoy them warm, or put them in the fridge overnight (do this, and the next day they will be especially moist!).
