What You Will Need:

  • An oven.
  • A roasting tin or baking tray.
  • A small plastic food bag.
  • A food processor or pestle and mortar.
  • A small bowl.
  • A sandwich knife.

Ingredients:

  • 4 slices of gluten-free brown bread.
  • A drizzle olive oil.
  • 2 tbs cream cheese.
  • 2 tbs soft, rindless goat cheese.
  • 1 red pepper.
  • A Pinch of freshly ground black pepper.
  • A handful of shelled walnuts.

Directions:

  • First, preheat the oven to 374 °C Fahrenheit.
  • Next, place the pepper on the roasting tin or baking tray and drizzle with a little olive oil, making sure to rub the oil all over the pepper.
  • Then cook until starting to char or well browned (the cooking process should take around 20 minutes).
  • After that, place in the plastic food bag, seal and set aside to cool.
  • Meanwhile, grind the walnuts to a fine crumb texture, using your food processor or pestle and mortar.
  • Thereafter, mix your cheeses in the bowl and season with pepper.
  • After that, spread the mixture over two slices of the gluten-free bread, making sure to reserve a teaspoonful.
