Here, Chef Doug Penfold showcases authentic flavourful tapas emphasizing Iberian and Latin American flavours. His nose-to-tail philosophy, adherence to sustainability, and enthusiasm for pairing dishes with wine express his versatility and enable his ever-changing creative menus. At a recent wine tasting at Cava we savoured a tantalizing sharing-plate of charred octopus and a hearty paella perfumed with saffron and chock full of the flavours of the Valencian Coast.
