Over the past few years, a movement that goes against any manifestation of animal violence has been growing in big scales. People around the world have become more conscious about nutrition and eager to preserve the planet we live in. 

 

In 1944 the Vegan Society was founded, and today is known as the oldest vegan organization. 50 years later, every November the World Vegan Month is celebrated to commemorate how far the vegan movement has come and to highlight how beneficial and accessible this lifestyle is. 

 

So in order to celebrate properly the World Vegan Month and if you’re a vegan-curios, probably your mind will blow with all the recipes, ideas and advice we have for you this entire month.

 

So let’s take this journey together!

 

We have this delicious Creamy Carrot Soup that it’s a 30 min meal, easy, super tasty and healthy, and it’s a great option either you want to eat it plain or as a garnish.

 

Did you know that carrots weren’t orange when they were first grown? Carrots first grown in Asia and they were purple, yellow, red and white, they have a different flavour from the Orange carrot, but all of them are still found today.

After many years, between 16 and 17 centuries, Dutch growers stabilized this delicious, crunchy and sweet Orange carrot, which is actually, the most popular. 

 

Carrots are highly nutritious and they’re the source of Beta Carotene, which is responsible for its colour and it’s the main antioxidant carrots have. Besides this, carrots are rich in Vitamin K1, fiber, and potassium.

 

One of the greatest benefits that carrots have is that they improve our eye health, this is because our body converts the beta carotene into Vitamin A and that’s what helps to prevent vision loss. 

 

Another great thing is that antioxidants have great power in reducing risk cancer such as Lung Cancer and Leukemia. However, bear in mind that consuming excessive carrots can be toxic to human bodies, overconsumption of Vitamin A can change the colour of your skin to slightly orange.

 

But don’t freak out! This is not harmful to health. It’s gonna unlikely happening due to a diet alone, but it may result from supplement use. 

 

Now that you know all these great benefits, let’s share this delicious recipe!

 

It’s one of my favourites and I love the colour it has, I love how tasty it is and you see, you’re gonna need only 30 min of your time to prepare it.

 

You’ll need:

 

  • 4 cups of carrots chopped in large pieces
  • 5 cups of water
  • 1 small onion
  • 1 teaspoon minced garlic
  • 1-2 teaspoons coconut oil 
  • 1-2 teaspoons minced ginger
  • Coconut Milk

 

Instructions: 

 

In a large pot add water, coconut oil, ginger and taste of salt, let it boil for 5 minutes. After this time, add the carrots, cover the pot and wait until they’re soft, this takes from 20 – 30 minutes.

 

Puree this in a food processor or blender and decorate with the Coconut Milk and get ready to fall in love with this flavourful Creamy Carrot Soup!
